  • 1 1/4 cups all-purpose flour

  • 1/2 teaspoon sea salt

  • 1 tablespoon baking powder

  • 1 1/4 teaspoons honey

  • 1 egg

  • 1 cup milk

  • 1/2 tablespoon bacon grease

  • 1 cup frozen blueberries, thawed and rinsed in warm water.

It sounds a little weird to use bacon grease, but it gives it just a subtle bit of savory flavor to offset the sweetness of the blueberries, as well as keeping it from sticking to the pan too much. Melted butter can be substituted if necessary, but I find that needing the bacon grease gives me a wonderful excuse to enjoy bacony goodness with my blueberry yummy. Make sure you rinse the blueberries and that they're completely thawed, so that you don't turn your pancakes blue and so they cook evenly.

  1. In a large bowl, sift together flour, salt, and baking powder. In a small bowl, beat together egg, honey, and milk. Stir wet mixture into flour mixture. Mix in the bacon grease and fold in the blueberries. 
  2. Heat a lightly oiled griddle or frying pan over medium heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot with butter and maple syrup or honey. Garnish with additional blueberries that haven't been eaten by toddler "helpers".
